What, exactly are the Engineers?

We thought the Engineers were simply the true alpha species that created mankind. And, maybe the answer to this particular question is that simple. But, if the Engineers created us, what was their purpose in doing so? Why are we left to live on earth, while the Engineers clearly inhabit other, very, very distant planets?

It’s obvious that even the Engineers are easily topped by other lifeforms, which gives us the hint that maybe the Engineers weren’t the true alphas of existence to begin with. However, after Prometheus and now Alien: Covenant, we have a lot of suggestion, and very little in the way of solid, factual answers.
